The Kitchen Manager at Canada's leading casual dining restaurant, Boston Pizza, oversees the daily operations of the kitchen, this includes the managing, scheduling, training, and control over food/labour costs. The Kitchen Manager leads the team during operations focusing on serving perfect food, every time, and working with a sense of purpose and urgency.
Additionally, they oversee the inventory and ordering of food and supplies, receiving and preparation of all foodstuffs according to BP policies and practices. The Kitchen Manager is responsible for ensuring that our most important people, our Guests and team members, have an excellent Boston Pizza experience from start to finish. - Managing inventory for food and beverage items to ensure the kitchen is adequately stocked
- Doing weekly Inventory to determine the food cost and the variance to find the coaching opportunities for the team as well as reducing wastage and increase profitability.
- Ordering supplies from the food vendors keeping in compliance with the budgets.
- Budgeting according to the sales forecasts and maintaining the food and labour costs as per the given targets.
- Responsible for hiring, training, and disciplining kitchen staff such as line cooks, prep cooks, dishwashers etc.
- Seeking ways to improve kitchen processes and ensure prompt service
- Create a schedule for kitchen staff to know their shifts and making sure of shift coverage for any call ins.
- Set standards for kitchen cleanliness and ensure cleaning is done daily, weekly and monthly as assigned.
- Responsible for cleaning and maintenance of kitchen equipment, including but not limited to Over, Fryer, Merry Chef and Grill.
- Tracks kitchen waste and look for improvements for financial return
- Cross trains kitchen staff for optimal performance.
- Make sure that K-times are followed for lunch, dinner or any promotions as required.
- Use Station Observation checklists (SOCs) to ensure all the kitchen stations are operat-ing at an optimal level.
- Sets up their shift up for success by using the shift preparation systems
- Checks dough and pasta prep with a focus on Perfect Food Every Time
- Leading with Purpose during peak revenue periods
- Make sure that the Assembly and Recipe binders are always updated according to the current menu.
- Responsible for Health and Safety of the kitchen staff.
- Follows the Food Safety Guide while working in the kitchen as well as educating the team members on the same.
- Responsible for successful Steritech and Regional Health Inspections as well as Corpo-rate Brand Standards Assessment – CBSA
- Making sure that all the kitchen team members are at 100% completion of BPlearning at all times.
- Excellent knowledge of the food and beverage industry
- Interpersonal and collaborative skills for working in a team setting
- Ability to work under pressure
- Critical thinking and problem-solving skills to overcome issues in the kitchen
- Strong leadership skills needed for organizing and planning kitchen staff
- Ability to be on their feet for long periods of time
- A basic financial understanding of managing waste, inventory, and upkeep of kitchen supplies
